Ingredients
Crust: All butter pie dough!1. 6 cups of fresh or frozen blue berries, rinsed and stems removed, if using frozen defrost and drained first.
2. 1/2 teaspoon lemon zest
3. 1 tablespoon lemon juice
4. 1/4 cup all-purpose flour
5. 1/2 cup white granulated sugar
6. 1/4 teaspoon cinnamon
7. 2 tablespoon butter unsalted into small pieces
Egg Wash Ingredients: 1. 1 egg
2. 1 tablespoon milk
How to put the pie together!
1. Prepare the crust. Roll out half of the dough 1/8-inch-circle on a floured (lightly) work surface about 13 inches in diameter. Fit the dough over a 9 in. pie pan, and then trim the edges to a 1/2 inch over the edge all around the pan. Put into the frig to chill for about 30 minutes.
2. Gently, mix the blue berries, sugar, flour, cinnamon, lemon zest, and lemon juice into a large bowl. Transfer them to the chilled bottom crust of the pie pan. Put on top of the pie the small butter pieces. Roll out remaining dough to the same size and thickness as the first. Place on top of the berry filling. Tuck the dough over and under the edge of the bottom dough, and crimp the edges with your fingers. Put the pie into the frig until the dough is chilled and thickened (30 minutes). Heat oven to 425 degrees.
3. Whisk the egg and mil together to make an egg wash.
4. Remove the unbaked pie from the frig. Brush the top with the egg wash. Score the pie on top 4 cuts. Place the pie on the middle rack of the oven with parchment paper or silpat lined baking pan positioned on the lower rack to catch any filling that may fall. Bake for 20 minutes 425 degrees. Reduce the heat to 350 degrees, and bake for 30-40 minutes more or until the juices bubbling and have thickened. Transfer to wire rack to cool.
